Ecological Tea Garden

We harvest and select the tea leaves in the spring. The tea trees accumulate enough nutrients throughout the winter, so the tea naturally has more nutrients and better taste and color than in other seasons.

The tea garden is located in Fenghuang/Phoenix Mountain (Fenghuang Shan), Chaozhou City, Guangdong Province - the core origin of Fenghuang/Phoenix Dan Cong tea. Situated at an average elevation of over 800 meters, these high-mountain tea trees thrive in a superior ecological environment. Perennially shrouded in mist and clouds, the area enjoys short sunlight exposure and abundant rainfall. The tea plants grow amongst rocky terrain rich in organic matter, and are harvested only once a year during the spring season.

Traditional Hand-Picking | Artisanal Commitment

Our tea is crafted by award-winning, experienced tea masters through five artisanal processes:

1. Leaf Harvesting
      We select premium broad-leaf fenghuang/Phoenix DanCong tea leaves from Chaozhou. Through withering, rolling, and controlled fermentation, we develop a rich, sweet aroma and a mellow, full-bodied taste.
2. Withering
      The fresh leaves are evenly spread under specific temperature and humidity conditions to moderately activate enzymes. This process induces physical and chemical changes, reduces moisture content, softens the stems and leaves, darkens the color to a dull green, and dissipates the grassy odor.

 

3. Rolling
      After spreading and pan-firing, the leaves rest gently, emitting a subtle tea fragrance. Then comes the crucial rolling stage. This step shrinks and tightens the leaves into slender strips while preserving their fine tips. With about 30% of the tea cells broken, soluble substances seep onto the surface, forming the foundation of the tea's flavor.
4. Drying
      The fermented tea leaves are quickly dried to lock in their strip-like shape and halt fermentation. This reduces excess moisture to prevent mold, further removes any grassy notes, and enhances floral and fruity aromas. Drying is done in two ways: traditional sun-drying and machine baking.
5. Charcoal Firing
      After traditional charcoal roasting, fenghuang/Phoenix Dan Cong tea takes on a dark brown, lustrous appearance. The leaves become evenly curled and tightly rolled, embodying the essence of time-honored craftsmanship.

The Efficacy of Tea

1. Refresh and invigorate. Tea contains ingredients such as caffeine, which plays a role in refreshing and invigorating.
2. Antioxidant. Substances such as tea polyphenols in tea have a strong antioxidant effect. They can remove free radicals in the body, slow down cell aging, delay aging, and prevent the occurrence of various chronic diseases.
